I just got a 5100 and FPP is going pretty smooth but I cannot figure out how to add zones so I can have more than 16 channels. If someone could shoot me an email on how to do this please email me at joshua(at)grgeek.com .
Also, If someone has a guide on FPP that would be awesome too.

Pretty simple actually. On the zone page, click on the EDIT ZONE button.
In the popup window click on the + at the bottom to add zones.
Then for each zone, put a check next to the box in each channel you want to enable.
I can send you a PDF with the FPP layout structure from the service manual.

that would be great. If you are allowed to send the whole service manual, that would be pretty cool too.
