We recently were donated a lot of four VXR-1000V to connect to our VX-3000V. We use VX-210V handhelds. We purchased four CAT-65 cables and we cannot make them work!!!. I need help. Vertex tech's say that these only work with UHF radios.

OK, first let's see if I understand what you have and are trying to do. The VXR-1000V is a mobile crossband repeater 
It is designed to provide extended handheld (HT) coverage by repeating transmissions in both directions through your high power mobile radio.
As such, it allows you to use HT's on site to communicate through a mobile radio with others that would be out of range of your HT's. Kind of like this diagram I found on an amateur radio site
Here is the problem. You have VHF HT's, a VHF mobile, and VHF repeater. Quoting the RFWHIZ.com web site (a pretty good source of information I might add)
The bottom line is your techs are being straight with you. You either need to use UHF HT's on site to talk through a VHF mobile, or VHF HT's to talk through a UHF mobile. What you have is not compatible with your system.

Go back to that diagram I borrowed. You notice it is using UHF HT's to talk to a VHF mobile. That is your problem. Everything is VHF, which means they are operating on too close a frequency range and will interfere with each other.A Vehicular Repeater operates on a different band than the mobile radio, i.e. - VHF mobile uses a UHF repeater or UHF mobile uses a VHF repeater.

I don't know much about 2-way radios but I'm over 50 and can't remember not having one around. Everything from Buddy and Citi-fone to Icom and Kenwood.

You can use the vxr-1000 "in band" or with a radio of the same band. You must however provide proper separation of the antennas and frequencies. If you cannot do that you can use a duplexer to accomplish the same thing.
You should only do this if you cannot obtain an FCC license or you have some other compelling reason like a huge investment in portable radios already.

We have 15 handheld radios (all VX-210AV), nine mobile radios (all VX-3000V), and one base station/repater (1 VXR-7000V), aside from these four VXR-1000V.
It will be a large task and investment to change all to accomodate the VXR-1000. We use this during house builds in Mexico so we can have the caravans and vounteer group sites communicated during the day and the trip back to the US. We just wanted to expand the reach of the handhelds without having to move our repater/base everytime.
These are to be used in Mexico, so the FCC license does not apply (we do have a license for 20 units, 100 watts max for one requency).
If you can tell me how this can be done we will be able to better serve our more than 3,000 yearly vounteers and more than 500 beneficiary families during our building season in Mexico. Otherwise, we'll have to sell the four VXR-1000'V.
